Preserving Potatoes

Herbs – Health Benefits

Question: Preserving Potatoes (submitted by Karen Treso)

I am wondering what to do with the enormous crop of potatoes that we harvested this year.  I don’t want to see them go to waste as we don’t have a cold room in which to store them for the winter.

Answer:

What a great question.  Yes, there are.  I have always believed that potatoes couldn’t be frozen, but have since found out that is just a myth.  They can be cooked, mashed and frozen for later use in soups or de-frosted and warmed up for mashed potatoes.  Others ways to preserve are soup, baked, frozen stuffed potatoes, tater tots, and scalloped potatoes.

Here are some links with recipes and instructions.

Question: Herbs – Health Benefits (submitted by LT. COL. June Magueflor (Ret).

Greetings! What I'm asking are your recommendations on what kinds of herbs should I grow that help treat and prevent immune disorders, helps lower blood pressure, blood sugar and cholesterol. Also herbs that are rich in vitamins A, B, C, D and E. Do you have also information on other herbs that have equivalent or similar medicinal values of chamomile, watercress and arjuna herbs?  This information would be of great help to me to improve my garden and my health condition. Thanks a lot and hope to hear from you soon.

* LT. COL. June Magueflor (Ret) has sent additional information regarding a herb that she calls the ‘mother of all herbs’ and thinks our readers will be interesed in because of its medicinal values and other information.  It is called Gotu Kola and this is a web site with some information.
