Blue Coloured FoodsBy Gwen Nyhus Stewart Blue is the colour of truth, understanding, and
tranquillity. This colour is
relaxing, calming, and ideal for places of healing. For people struggling with insomnia, blue is an important
colour as it relaxes the mind and body.
Blue means spirit and is very conducive for places of meditation,
inspiring patience and calm thought.
Exposure to blue reduces blood pressure, pulse rate, and brain wave
activity. Blue is used in the treatment of throat problems,
fevers, stings, itchiness, heart palpitations, inflammations, headaches, and
for the treatment of anxiety disorders related to nervousness, tension, or
fear. Blue foods are thought to
maintain urinary health, healthy aging, assist in the memory function, and lower
the risk of some types of cancer. This
colour encourages exhalation so is very helpful in cases of asthma where it
can ease symptoms of breathlessness.
It is beneficial in healing burns, reduces bleeding, and alleviates
pain. Blue Foods and Recipes Blueberries (Vaccinium
corymbosum) Blueberries are excellent sources of several
phytochemicals that have been shown to fight infection, inflammations, and
prevent cellular damage. They are
high in vitamin C, which helps fight cataracts, and are a good source of
potassium, which helps maintain normal fluid balance, blood pressure, and
heartbeat. They are high in the
soluble fibre pectin, which has been shown to lower cholesterol, and are high
in the same compound as cranberries so curtail urinary tract infections. Creamy Blueberry Dip 2 cups (500 mL) Blueberries 1/3 cup (75 mL) Cream cheese 1 tbsp. (15 mL) Apricot preserves In a food processor or blender, place blueberries,
cream cheese, and apricot preserves and whirl until smooth. Serve with sliced fruit or use as a
dessert sauce spooned over cut-up fruit.
Makes 2 cups of dip. Hot Spicy Blueberry Sauce 1 cup (250 mL) Blueberries ¼ cup (50 mL) Sugar ½ tsp. (2 mL) Cinnamon ¼ tsp. (1 mL) Nutmeg Combine blueberries, sugar, cinnamon, and
nutmeg. Bring to a boil and boil for
5 minutes. Stir occasionally. Serve hot on ice cream. Rosemary (Rosmarinus
officinalis) Rosemary fortifies the immune system, strengthens
blood vessels, improves circulation, stimulates digestion, and has been shown
to fight cancer-causing toxins.
Historically, rosemary has been used for strengthening the memory as
it has compounds that increase blood flow to the head and stimulate the
brain’s cortex, improving concentration and memory. Rosemary soothes the nerves and tension headaches and helps
improve mood. This plant contains
anti-inflammatory compounds that make it useful for reducing the severity of
asthma attacks. Dipping Sauce Purée rosemary leaves with olive oil. Use for dipping breads. Garlic Roast Potatoes with Rosemary 5 Potatoes, scrubbed, cut into fours 2 cloves Garlic, crushed 2 tsp. (10 mL) Rosemary, dried, crushed 2 tbsp. (30 mL) Olive oil Sea salt, to taste Black pepper, freshly ground, to taste Mix together garlic, rosemary, olive oil, salt, and
pepper in a mixing bowl. Add
potatoes, mix well, and place potatoes on a baking sheet. Roast potatoes in a 375º F (190ºC) oven
for approximately 30 minutes or until potatoes are done. Turn frequently so that all sides of the
potatoes are browned. Serve
immediately. The outside of the
